Yummy Pav Bhaji Recipe in Healthy Style

Today’s post is different from my customary beauty and makeup related posts. Here in, I would put forth my not-so-perfect cooking but almost perfect health-conscious side :-) .
Those of you, who read my blog regularly, must know that I had recently spent a long weekend with parents and parents in laws. Whilst enjoying every moment with loved ones I had a couple of cooking lessons from my Mom and sister-in-law. I learnt few dishes that are yummy and easy to make. This recipe that I am going to share with you is little different from the ones that are already shared on my blog – it is yummmmmmyyyyy too :dancydancy:.
Yummy, healthy Pav Bhaji (so many adjectives )takes just 10-15 minutes for the entire process. You can effortlessly cook this dish even when you have to feed some guests at home ;-). These days many of us are joining the clan of health conscious people. Considering that in mind and not completely overlooking the yummy quotient, I (read: we – my SIL is also a health conscious freak :dancy_s: ) tweaked it a little from the usual pav bhaji recipe.
Ingredients for ‘Yummy Pav Bhaji Recipe in Healthy Style’
1) 2 Carrots.
2) 3 Potatoes.
3) 1 Capsicum
4) 200 gm french beans.
5) 200 gm cauliflower.
6) 2 big red tomatoes.
7) ½ cup peas.
8) 1 Lemon.
9) 1 Onion.
10) 2 green chillies.
11) Fresh coriander.
Spices
1) 1 and half table spoon Pav Bhaji masala.
2) 1 spoon coriander powder.
3) Salt according to taste.
4) Red chili powder according to taste.
Pav Bhaji Recipe
Step 1: Thoroughly wash all the vegetables and chop them. Make sure that you peel off (I know it does not require mentioning ;-) ) the potatoes before chopping them. While chopping these vegetables, you do not have to perfect- be carefree about the size and shape. You can make cut them in any size and in your favorite shape :yahoo: . Still, I would recommend cutting in smaller sizes as that would require less cooking time.
Step2a: Put all these vegetables in a pressure cooker. Add 1 cup water or whatever quantity is required to fully immerse the vegetables. Add salt, and pressure cook till vegetables become soft. Usually it takes around 10-12 minutes. For the leftover water, either you can drain out or dry it out on high flame. Mash all the cooked vegetables using a masher.
Step2b: This step should be worked on simultaneously while the vegetables are being pressure cooked (step2a). Heat the pan; add 2 tea spoons olive oil, green chillies and tomatoes. Cook them till they become soft. Add pav bhaji masala and coriander powder, and sauté for 2-3 minutes.
Step3: Add the mashed vegetables in the pan and cook on high flame for a minute. If the gravy is not thick enough then reduce the flame and simmer until it gets thick.
Step4: When the gravy begins to thicken, turn off the flame and transfer the content to a hot casserole. Your bhaji is ready now. Garnish it with fresh coriander and low fat butter.
Step5: Get whole wheat pavs , slice them in 2 pieces and toast them lightly on medium flame. Whole wheat pavs are difficult to find, if you do not get them then go for any normal milk pavs.
Step6: Serve it hot with finely chopped onions and lemon juice. I did not put the onions and lemon juice in the bhaji itself as everybody has different likes and dislikes. According to their own tastes, they can add these ingredients to bhaji.
